Ingredients
- 4 bone-in, skin-on chicken thighs (or breasts, drumsticks — your call)
- 3 tbsp olive oil
- ¼ cup fresh lemon juice (about 2 lemons)
- Zest of 1 lemon
- 4 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp thyme (or rosemary)
- 1 tsp salt
- ½ tsp black pepper
- Optional: ½ tsp crushed red pepper flakes for a kick
- 1 lemon, sliced into thin rounds
- Fresh parsley or dill for garnish
