Italian Chopped Salad

Ingredients:

For the Salad:

  • 1 head romaine lettuce, chopped
  • 1 cup radicchio or iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup pepperoncini (mild pickled peppers), sliced
  • ½ cup canned chickpeas (garbanzo beans), drained and rinsed
  • ¼ cup black olives or Kalamata olives, sliced
  • ½ cup salami or pepperoni, diced
  • ½ cup provolone or mozzarella, cubed or shredded
  • Optional: croutons or shaved Parmesan on top

For the Italian Dressing:

  • ⅓ cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, finely minced
  • ½ tsp dried oregano
  • ¼ tsp dried basil
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)
