Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

For the Pasta:

  • 12 oz pasta (fettuccine, penne, or your favorite)
  • 1 tbsp olive oil (for pasta cooking water)

For the Sauce:

  • 2 tbsp butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (in oil)
  • 1 ½ cups heavy cream
  • ¾ cup chicken broth
  • 1 cup baby spinach, roughly chopped
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Optional: red pepper flakes, for a hint of spice
