Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs (or digestive biscuits)
- ¼ cup melted butter
- 2 tbsp brown sugar
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, room temp
- ½ cup sour cream
- ½ cup honey (use a good floral one!)
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp cornstarch (optional for extra structure)
For the Homemade Honeycomb:
- 1 cup white sugar
- ¼ cup honey or golden syrup
- 2 tbsp water
- 2 tsp baking soda
