Creamy Chicken & Rice Casserole Delight

When you’re craving something warm, comforting, and packed with homey flavor, nothing beats a creamy chicken and rice casserole. This dish brings together tender chicken, fluffy rice, and a creamy, cheesy sauce all baked to bubbly perfection. It’s easy to throw together, feeds a crowd, and makes delicious leftovers (if you have any!).

Perfect for weeknights, potlucks, or lazy Sundays when you want something fuss-free but totally delicious.

Ingredients (Serves 6–8)

For the Casserole:

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
  • 1 cup uncooked long-grain white rice
  • 2½ cups chicken broth
  • 1 cup milk (or half-and-half for extra creaminess)
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas and carrots (or any mix of frozen veggies you like)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper

For Topping (Optional but Recommended):

  • ½ cup shredded cheddar cheese
  • ½ cup buttery cracker crumbs or breadcrumbs
  • 2 tbsp butter, melted
