Easy Lamington recipe

Lamingtons are little squares of joy—tender vanilla sponge coated in a luscious chocolate glaze, then rolled in desiccated coconut. They’re humble, nostalgic, and totally irresistible. Perfect for bake sales, afternoon tea, or just because you deserve something sweet.

This easy version skips the fuss but keeps all the flavor. No complicated steps—just soft sponge, smooth chocolate, and a whole lot of coconut love.

Ingredients

For the Sponge Cake:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1½ tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup (125ml) milk

Want extra lightness? Swap ¼ cup of the flour for cornstarch.

For the Chocolate Coating:

  • 3½ cups (440g) powdered sugar
  • ½ cup (50g) unsweetened cocoa powder
  • 3 tbsp unsalted butter, melted
  • ½ cup (125ml) milk (plus more if needed)

For Rolling:

  • 2–3 cups desiccated coconut
