Cucumber Tomato Salad

This salad is the perfect combination of juicy ripe tomatoes, crunchy cucumbers, tangy onions, and fragrant herbs—all tossed in a zesty homemade dressing. It’s simple to make, incredibly refreshing, and pairs perfectly with grilled foods, sandwiches, or enjoyed as a healthy snack!

Ingredients:

Salad:

  • 2 large cucumbers, sliced or diced
  • 3 ripe tomatoes (or 1½ cups cherry tomatoes), sliced or halved
  • ½ medium red onion, thinly sliced
  • ⅓ cup fresh parsley or dill, chopped finely
  • ⅓ cup crumbled feta cheese (optional but highly recommended!)

Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar (or freshly squeezed lemon juice)
  • 1 teaspoon honey (optional, balances acidity)
