Crock Pot Chicken and Rice

1. Prepare the Crock Pot:

  • Grease the inside of your Crock Pot with a bit of cooking spray or oil to prevent sticking.

2. Layer the Ingredients:

  • Place the chicken breasts in the bottom of the Crock Pot.
  • Add the diced onion, minced garlic, paprika, thyme, salt, and pepper on top of the chicken.
  • Pour the rice evenly around the chicken (avoid pouring directly on top to ensure even cooking of the rice).

3. Add the Liquids:

  • In a medium bowl, whisk together the chicken broth and cream of chicken soup until smooth.

  • The chicken should be tender and the rice fully cooked, having absorbed most of the liquid.

5. Add the Cheese (Optional):

  • About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover again and let it melt into the dish.

6. Shred or Serve the Chicken Whole:

  • Once the dish is done, you can either shred the chicken directly in the Crock Pot using two forks or leave the breasts whole. Stir everything together so the chicken and rice are evenly combined and creamy.

7. Garnish and Serve:

  • Sprinkle with freshly chopped parsley for a touch of color and fresh flavor.
  • Serve warm and enjoy!
