Meatball and potato casserole

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Meatballs:
    • In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, pepper, and the egg. Mix until well combined.
    • Form the mixture into meatballs, about 1 inch in diameter.
    • In a skillet, brown the meatballs over medium heat until they are cooked through. You don’t need to fully cook them at this stage, as they will continue cooking in the oven.
    • Pour marinara sauce over the meatballs, coating them evenly.
  3. Prepare Potatoes:
    • In a separate bowl, toss the sliced potatoes with olive oil, salt, pepper, and dried thyme.
  1. Assemble the Casserole:
    • In a greased baking dish, layer the sliced potatoes at the bottom.
    • Place the partially cooked meatballs on top of the potatoes.
    • Pour any remaining marinara sauce over the meatballs.
    • Sprinkle shredded mozzarella cheese on top.
  2. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for about 30-35 minutes or until the potatoes are tender.
    • Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and golden brown.
  3. Garnish and Serve:
    • Garnish with chopped fresh parsley before serving.
  4. Serve Warm:
    • Serve the Meatball and Potato Casserole warm and enjoy!

This casserole is a complete meal with the combination of meatballs, potatoes, and gooey melted cheese. It’s a family-friendly dish that’s perfect for a comforting dinner.
