Air fryer Garlic Butter Roasted Mushrooms

Ingredients:

  • 1 pound (450g) mushrooms (button, cremini, or your choice), cleaned and trimmed
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare the Mushrooms:
    • Clean the mushrooms by wiping them with a damp cloth or paper towel. Avoid washing them under water as they can absorb moisture and become soggy.
    • Trim the ends of the mushroom stems if necessary.
  3. Prepare the Garlic Butter Mixture:
    • In a small bowl, combine the melted butter, minced garlic, olive oil, dried thyme, salt, and freshly ground black pepper. Mix well.
  4. Coat the Mushrooms:
    • Place the mushrooms in a large mixing bowl.
    • Pour the garlic butter mixture over the mushrooms and toss until they are evenly coated.
  5. Air Fry the Mushrooms:
    • Place the coated mushrooms in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding.
    • Air fry at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through the cooking time to ensure even roasting.
  6. Garnish and Serve:
    • Once the mushrooms are golden brown and tender, remove them from the air fryer.
    • Transfer the roasted mushrooms to a serving dish.
    • Garnish with freshly chopped parsley.
    • Serve immediately with lemon wedges on the side for a burst of freshness.
