- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a mixing bowl, combine the cream cheese, mayonnaise, Parmesan cheese, minced garlic, smoked paprika, salt, pepper, and cayenne pepper (if using). Mix until well combined.
- Butterfly each chicken breast by slicing horizontally almost all the way through, then open them up like a book.
- Spread a layer of the cream cheese mixture inside each chicken breast.
- Place a few slices of jalapeño peppers on top of the cream cheese mixture.
- Fold the chicken breast back over the filling and secure with toothpicks, if needed.
- Place the stuffed chicken breasts in the prepared baking dish.
- Sprinkle the shredded cheddar cheese over the top of the chicken breasts.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the toothpicks and garnish with chopped cilantro or parsley before serving.
Serve your Jalapeño Chicken with rice, salad, or your favorite side dish. Enjoy the spicy, cheesy goodness!
