Ingredients
For the Pork Loin:
- 1 ½ lbs (700 g) pork loin, trimmed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (or ½ tsp dried)
- Salt & black pepper to taste
For the Camembert Mushroom Sauce:
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz (225 g) mushrooms, sliced (button or cremini work well)
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 oz (120 g) Camembert cheese, rind removed, cut into cubes
- ½ tsp Dijon mustard (optional, for depth)
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
For the Garlic Mashed Potatoes:
- 2 lbs (900 g) potatoes, peeled and cubed
- 4 cloves garlic, peeled
- ½ cup whole milk (or heavy cream for extra richness)
- 3 tbsp butter
- Salt & black pepper to taste
