Creamy Pork Loin with Camembert Mushroom Sauce and Garlic Mashed Potatoes

Ingredients

For the Pork Loin:

  • 1 ½ lbs (700 g) pork loin, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • Salt & black pepper to taste

For the Camembert Mushroom Sauce:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 8 oz (225 g) mushrooms, sliced (button or cremini work well)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 oz (120 g) Camembert cheese, rind removed, cut into cubes
  • ½ tsp Dijon mustard (optional, for depth)
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Garlic Mashed Potatoes:

  • 2 lbs (900 g) potatoes, peeled and cubed
  • 4 cloves garlic, peeled
  • ½ cup whole milk (or heavy cream for extra richness)
  • 3 tbsp butter
  • Salt & black pepper to taste
