Step 1: Cook the Garlic Rice
- In a saucepan, heat butter or oil over medium heat.
- Add minced garlic and sauté for 30–60 seconds until fragrant.
- Stir in rice and cook for 1–2 minutes, letting it toast lightly.
- Add water or broth and a pinch of salt.
- Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes until rice is cooked and liquid is absorbed.
- Fluff with a fork and set aside.
Step 2: Cook the Chicken
- In a bowl, mix soy sauce, honey (or brown sugar), sriracha, ketchup, garlic, and cornstarch.
- Heat oil in a skillet over medium-high heat.
- Add chicken pieces and cook for 5–7 minutes, until golden and cooked through.
- Pour the sauce over the chicken and stir to coat.
- Let it simmer for 2–3 minutes, until thick and sticky.
- Remove from heat.
Step 3: Prep the Tomatoes
- Slice cherry tomatoes in half and drizzle with olive oil and a pinch of salt. Let them sit while you build the bowl for maximum juiciness.
Step 4: Assemble the Bowl
- Spoon garlic rice into a bowl as your base.
- Add a generous portion of sweet & spicy chicken on one side.
- Add a scoop of cherry tomatoes on the other.
- Garnish with sesame seeds, chopped herbs, or green onions if desired.
Tips & Variations:
- Add cucumber, avocado, or steamed broccoli for more veggies.
- Use cauliflower rice for a low-carb version.
- Make it extra spicy by adding red pepper flakes or more sriracha.
