Sweet & Spicy Chicken Bowl with Garlic Rice Cherry Tomatoes

Step 1: Cook the Garlic Rice

  1. In a saucepan, heat butter or oil over medium heat.
  2. Add minced garlic and sauté for 30–60 seconds until fragrant.
  3. Stir in rice and cook for 1–2 minutes, letting it toast lightly.
  4. Add water or broth and a pinch of salt.
  5. Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes until rice is cooked and liquid is absorbed.
  6. Fluff with a fork and set aside.

Step 2: Cook the Chicken

  1. In a bowl, mix soy sauce, honey (or brown sugar), sriracha, ketchup, garlic, and cornstarch.
  2. Heat oil in a skillet over medium-high heat.
  3. Add chicken pieces and cook for 5–7 minutes, until golden and cooked through.
  4. Pour the sauce over the chicken and stir to coat.
  5. Let it simmer for 2–3 minutes, until thick and sticky.
  6. Remove from heat.

Step 3: Prep the Tomatoes

  • Slice cherry tomatoes in half and drizzle with olive oil and a pinch of salt. Let them sit while you build the bowl for maximum juiciness.

Step 4: Assemble the Bowl

  1. Spoon garlic rice into a bowl as your base.
  2. Add a generous portion of sweet & spicy chicken on one side.
  3. Add a scoop of cherry tomatoes on the other.
  4. Garnish with sesame seeds, chopped herbs, or green onions if desired.

Tips & Variations:

  • Add cucumber, avocado, or steamed broccoli for more veggies.
  • Use cauliflower rice for a low-carb version.
  • Make it extra spicy by adding red pepper flakes or more sriracha.
