Cheesy Hasselback Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes thoroughly and pat them dry with paper towels.
  3. Place a potato on a cutting board, flat side down, and make thin slices across the potato, about 1/8-inch apart, making sure not to cut all the way through. You can place chopsticks or wooden spoons on either side of the potato to prevent cutting all the way through.
  4. In a small bowl, mix together the melted butter and minced garlic. Brush the potatoes with the garlic butter mixture, making sure to get the butter in between the slices.
  5. Season the potatoes with salt and pepper to taste.
  1. Place the potatoes on a baking sheet lined with parchment paper or aluminum foil.
  2. Bake the potatoes in the preheated oven for about 45 minutes to 1 hour, or until they are crispy on the outside and tender on the inside.
  3. Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and grated Parmesan cheese over the tops of the potatoes, making sure to get the cheese in between the slices.
  4. Return the potatoes to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  5. Garnish the potatoes with chopped fresh parsley, if desired, before serving.
