Creamy Cajun Chicken Linguine with Garlic Mozzarella Sauce

1. Cook the Pasta

  • Boil linguine in salted water until al dente. Drain and set aside (reserve ½ cup of pasta water).

2. Season & Cook the Chicken

  • Rub the chicken breasts with Cajun seasoning, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken 5–6 minutes per side, until golden and fully cooked.
  • Remove and let rest, then slice into strips.

3. Make the Garlic Mozzarella Sauce

  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté for about 30 seconds.
  • Pour in heavy cream and stir. Let it gently simmer for 3–4 minutes.
  • Add mozzarella and Parmesan cheese. Stir until melted and smooth.
  • Season with salt, pepper, and paprika (if using).
  • If the sauce is too thick, add a splash of reserved pasta water to loosen it.

4. Combine

  • Toss cooked linguine into the sauce until well coated.
  • Add sliced Cajun chicken on top or mix it in.
  • Let everything warm together for 1–2 minutes.

Serve & Garnish

  • Garnish with fresh parsley and extra grated Parmesan.
  • Serve hot with garlic bread or a crisp side salad.

Optional Add-ins:

  • Sautéed bell peppers or spinach
  • A pinch of red pepper flakes for extra heat
  • A squeeze of lemon juice for brightness
