Ingredients (Serves 4)

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into strips
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp oil (avocado, sesame, or olive)

For the Veggies (use any combo of these):

  • 1 red bell pepper, sliced
  • 1 yellow or orange bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or green beans
  • 1 small carrot, thinly sliced or julienned
  • ½ red onion, sliced
  • 2 tsp minced garlic
  • 1 tsp fresh grated ginger (optional)

For the Teriyaki Sauce:

  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • Optional: pinch of red pepper flakes

For Serving:

  • 2 cups cooked wild rice (or brown rice, jasmine rice, or quinoa)
  • Sesame seeds & green onions for garnish
