Ingredients (Serves 2–3):
- 1 lb squid, cleaned and cut into rings or strips
- 1 tbsp Shaoxing wine or dry sherry (optional, for marinating)
- 1/2 tsp salt
- 2 tbsp cornstarch
- 2 tbsp oil (vegetable or peanut oil)
Aromatics & Spices:
- 1 tbsp minced garlic
- 1 tsp grated ginger (optional)
- 1 ½ tsp ground cumin
- 1 tsp chili flakes or dried red chilies, to taste
- 1/2 tsp ground Sichuan peppercorns (optional, for a numbing heat)
- 2–3 scallions, cut into 2-inch sections
- Optional: sliced red onion or bell pepper for color
