Greek Orzo Salad

A colorful, tangy pasta salad tossed with Mediterranean flavors — bright, satisfying, and ready in under 30 minutes!

Ingredients (Serves 6–8):

  • 1 ½ cups dry orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • Optional: chopped bell pepper, artichoke hearts, or baby spinach

Lemon-Oregano Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste
