Ingredients (Serves 4):
For the Chicken:
- 2 large boneless chicken breasts (or thighs), cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tbsp taco seasoning (or mix of cumin, paprika, chili powder, garlic powder, oregano, salt)
- Juice of ½ lime
For the Bowl Base:
- 2 cups cooked white or brown rice (or cilantro-lime rice)
- 1 cup canned black beans or pinto beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1/4 cup diced red onion (optional)
- Shredded lettuce or mixed greens
For the Guacamole:
- 2 ripe avocados
- Juice of 1 lime
- Salt, black pepper
- 1 tbsp finely chopped red onion
- Optional: chopped cilantro, diced tomato, jalapeño
Crispy Tortilla Strips:
- 2 small corn or flour tortillas
- Olive oil spray or light brushing
- Salt & chili powder (optional)
