Chicken Taco Bowl with Guacamole and Crispy Tortilla

A hearty bowl loaded with spiced chicken, creamy guac, crispy tortilla strips, and all your favorite taco toppings — fun, filling, and full of flavor!

Ingredients (Serves 4):

For the Chicken:

  • 2 large boneless chicken breasts (or thighs), cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning (or mix of cumin, paprika, chili powder, garlic powder, oregano, salt)
  • Juice of ½ lime

For the Bowl Base:

  • 2 cups cooked white or brown rice (or cilantro-lime rice)
  • 1 cup canned black beans or pinto beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup diced red onion (optional)
  • Shredded lettuce or mixed greens

For the Guacamole:

  • 2 ripe avocados
  • Juice of 1 lime
  • Salt, black pepper
  • 1 tbsp finely chopped red onion
  • Optional: chopped cilantro, diced tomato, jalapeño

Crispy Tortilla Strips:

  • 2 small corn or flour tortillas
  • Olive oil spray or light brushing
  • Salt & chili powder (optional)
