Mexican Street Corn Pasta Salad

A zesty, creamy fusion of grilled corn, pasta, and bold Mexican flavors. Like Elote in a bowl!

Ingredients (Serves 6–8):

  • 8 oz pasta (elbow, rotini, or penne)
  • 2 cups grilled corn kernels (from 3–4 ears) or thawed frozen corn
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or Mexican crema
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika (optional)
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled cotija or feta cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions or red onion
  • Optional: 1 small jalapeño, finely chopped (for heat)
