Ingredients (Serves 6–8):
- 8 oz pasta (elbow, rotini, or penne)
- 2 cups grilled corn kernels (from 3–4 ears) or thawed frozen corn
- 1/3 cup mayonnaise
- 1/3 cup sour cream or Mexican crema
- 1 clove garlic, minced
- Juice of 1 lime
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika (optional)
- 1/4 tsp cumin
- Salt and pepper to taste
- 1/2 cup crumbled cotija or feta cheese
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions or red onion
- Optional: 1 small jalapeño, finely chopped (for heat)
