Ingredients:
Dried Fruit Mixture (about 3 cups total):
- 1 cup dried cranberries
- 1 cup golden or dark raisins
- 1/2 cup chopped dates or dried apricots
- 1/2 cup chopped dried cherries or dried pineapple
- 1/4 cup brandy, rum, or orange juice (for soaking)
Cake Batter:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup light brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice (optional)
- 1 tsp vanilla extract
- Zest of 1 orange (optional but recommended)
- 1 cup chopped pecans or walnuts (optional)
