Barbacoa Beef Tacos

Ingredients

For the Barbacoa Beef:

  • 3–3.5 lbs beef chuck roast (cut into large chunks)
  • Salt & black pepper, to taste
  • 3 tablespoons oil (for browning)
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 3 chipotle peppers in adobo sauce (from a can)
  • 1 tablespoon adobo sauce (from the same can)
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ½ teaspoon ground cloves
  • 1 ½ teaspoons smoked paprika (optional)
  • Juice of 2 limes
  • ¼ cup apple cider vinegar
  • 1 cup beef broth
  • 2 bay leaves

For Serving:

  • Small corn or flour tortillas
  • Chopped onions, fresh cilantro, lime wedges
  • Crumbled cotija cheese or shredded Monterey Jack
  • Pickled red onions or sliced jalapeños (optional)
