Ingredients
For the Barbacoa Beef:
- 3–3.5 lbs beef chuck roast (cut into large chunks)
- Salt & black pepper, to taste
- 3 tablespoons oil (for browning)
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 3 chipotle peppers in adobo sauce (from a can)
- 1 tablespoon adobo sauce (from the same can)
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- ½ teaspoon ground cloves
- 1 ½ teaspoons smoked paprika (optional)
- Juice of 2 limes
- ¼ cup apple cider vinegar
- 1 cup beef broth
- 2 bay leaves
