Ingredients:

For the Boil:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2–3 ears of corn, broken into halves or thirds
  • 1 lb (450g) smoked sausage or Andouille sausage, cut into chunks
  • 1–2 medium potatoes, quartered
  • 2 tbsp butter (for extra richness)
  • 1 lemon, quartered
  • 3–4 garlic cloves, smashed
  • 1 tbsp Old Bay seasoning (or Cajun seasoning)
  • 1 tsp smoked paprika
  • Salt + pepper to taste
  • 6 cups water or seafood broth (for boiling)

For the Stuffing:

  • 1 box (6 oz) stuffing mix (or homemade, if you prefer)
  • 1/2 cup chicken broth
  • 1/4 cup butter
  • 1/2 onion, finely chopped
  • 1/4 tsp dried thyme
  • Salt + pepper to taste
