Step 1: Preheat and Prep
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
Step 2: Season the Chicken
- In a bowl, combine chicken cubes with paprika, garlic powder, and black pepper. Toss to coat evenly.
Step 3: Wrap with Bacon
- Wrap each chicken piece with a piece of bacon and secure with a toothpick.
- If using brown sugar, sprinkle a little on each bacon-wrapped bite for a caramelized finish.
Step 4: Bake
- Arrange chicken bites on the wire rack.
- Bake for 25–30 minutes, flipping once halfway through, until the bacon is crispy and chicken is cooked through (internal temperature should be 165°F/74°C).
Step 5: Add Optional Glaze
- If using glaze, mix honey or maple syrup with Dijon mustard.
- Brush glaze over chicken bites in the last 5 minutes of baking.
Step 6: Serve
- Remove from oven and let rest for a few minutes.
- Serve warm with toothpicks and dipping sauces of your choice!
