Step 1: Preheat and Prep

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.

Step 2: Season the Chicken

  1. In a bowl, combine chicken cubes with paprika, garlic powder, and black pepper. Toss to coat evenly.

Step 3: Wrap with Bacon

  1. Wrap each chicken piece with a piece of bacon and secure with a toothpick.
  2. If using brown sugar, sprinkle a little on each bacon-wrapped bite for a caramelized finish.

Step 4: Bake

  1. Arrange chicken bites on the wire rack.
  2. Bake for 25–30 minutes, flipping once halfway through, until the bacon is crispy and chicken is cooked through (internal temperature should be 165°F/74°C).

Step 5: Add Optional Glaze

  1. If using glaze, mix honey or maple syrup with Dijon mustard.
  2. Brush glaze over chicken bites in the last 5 minutes of baking.

Step 6: Serve

  1. Remove from oven and let rest for a few minutes.
  2. Serve warm with toothpicks and dipping sauces of your choice!
