Ingredients:

For the Veggie Rolls:

  • 8-10 rice paper wrappers
  • 1 cup cooked quinoa or rice (optional, for extra heartiness)

  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced
  • 1/2 cup purple cabbage, thinly sliced

  • 1/4 cup green onions, chopped (optional)
  • 1 tbsp sesame seeds (optional, for garnish)

For the Peanut Sauce:

  • 2 tbsp soy sauce (low-sodium)
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or lime juice
  • 1-2 tsp sesame oil
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • 2-3 tbsp warm water (adjust for desired consistency)
  • 1/2 tsp chili flakes or sriracha (optional, for heat)
