Pickled Beets

Step 1: Prepare and Cook the Beets

  1. Wash and scrub the beets to remove any dirt. You can leave the skin on at this point since it will be easier to remove after cooking.
  2. Place the beets in a large pot and cover them with water. Bring the water to a boil and reduce the heat to a simmer. Cook the beets for 30-40 minutes (depending on their size), until they are tender when pierced with a fork.
  3. Once the beets are cooked, drain them and let them cool slightly. Peel the skins off by rubbing them gently with your hands or a paper towel (the skins should come off easily).
  4. Slice the beets into thin rounds, wedges, or cubes, depending on your preference.

Step 2: Make the Pickling Brine

  1. In a medium saucepan, combine the vinegar, water, sugar, and salt. If you’re using cloves, cinnamon, mustard seeds, or peppercorns, add them to the pot now.
  2. Bring the mixture to a boil, stirring occasionally to dissolve the sugar. Once it reaches a boil, reduce the heat and let it simmer for about 5 minutes to infuse the flavors.

Step 3: Pack the Beets

  1. Pack the sliced beets into sterilized glass jars (either one large jar or several smaller ones). If you’re using onions, you can alternate layers of beets and onion slices for extra flavor.
  2. Carefully pour the hot brine over the beets, making sure the beets are fully submerged. If you’re using spices, divide them evenly between the jars or leave them in the saucepan if making just one jar.
  3. Seal the jars tightly with lids and let them cool to room temperature.

Step 4: Store and Serve

  1. Once the jars are cool, refrigerate the pickled beets for at least 24-48 hours before serving to allow the flavors to develop. The longer they sit, the better the taste.
  2. Store in the refrigerator for up to 1 month. The pickled beets will continue to develop more flavor over time.
