Beef and Gravy Pie with Chunky Chips

Ingredients:

For the Beef and Gravy Pie:
  • 1.5 pounds (700g) beef stew meat, cubed
  • 2 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 2 carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 sheet puff pastry, thawed if frozen
  • 1 egg (beaten, for egg wash)
For the Chunky Chips:
  • 4 large potatoes, peeled and cut into chunky chips
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
