Ingredients:

For the Chicken:

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) soy sauce
  • 1 tablespoon (15 g) brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) ginger, minced
  • Salt and pepper, to taste

For the Sauce:

  • 1 cup (240 ml) pineapple juice (from a can of pineapple chunks)
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons (30 g) brown sugar
  • 1 tablespoon (15 ml) rice vinegar (or apple cider vinegar)
  • 1 tablespoon (8 g) cornstarch, mixed with 2 tablespoons (30 ml) water (for thickening)

For the Stir-fry:

  • 1 tablespoon (15 ml) olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup (75 g) red onion, chopped
  • 1 can (20 oz/567 g) pineapple chunks, drained (save the juice for the sauce)
  • 2 cups (320 g) cooked rice (preferably jasmine or basmati)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds, for garnish (optional)
