Ingredients:
For the Chicken:
- 2 large chicken breasts, cut into bite-sized pieces
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (15 g) brown sugar
- 2 cloves garlic, minced
- 1 teaspoon (5 g) ginger, minced
- Salt and pepper, to taste
For the Sauce:
- 1 cup (240 ml) pineapple juice (from a can of pineapple chunks)
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons (30 g) brown sugar
- 1 tablespoon (15 ml) rice vinegar (or apple cider vinegar)
- 1 tablespoon (8 g) cornstarch, mixed with 2 tablespoons (30 ml) water (for thickening)
For the Stir-fry:
- 1 tablespoon (15 ml) olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup (75 g) red onion, chopped
- 1 can (20 oz/567 g) pineapple chunks, drained (save the juice for the sauce)
