  • 4-5 medium russet potatoes, peeled and sliced into ¼-inch thick rounds
  • 1 large onion, thinly sliced
  • 4 slices of bacon, chopped (optional, but recommended for extra flavor)
  • 3 cloves garlic, minced
  • 2 cups beef or chicken broth
  • 1 cup water
  • 2 tbsp fresh parsley, chopped (plus more for garnish)
  • 1 tsp dried thyme
  • 1 bay leaf
