Cream Cheese and Bacon Stuffed Doritos Chicken

1. Prepare the Filling:

  1. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, and chopped green onions.
  2. Add garlic powder, onion powder, salt, and pepper to taste. Mix until well combined.

2. Prepare the Chicken:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  3. Stuff each chicken breast with the cream cheese mixture, pressing the edges to seal.

3. Coat the Chicken:

  1. Place the crushed Doritos in a shallow dish.
  2. In another shallow dish, place the flour.
  3. In a third shallow dish, place the beaten eggs.
  4. Dredge each stuffed chicken breast in the flour, shaking off any excess.
  5. Dip the floured chicken into the beaten eggs, ensuring it’s fully coated.
  6. Press the chicken into the crushed Doritos, coating it evenly and pressing the crumbs onto the chicken to adhere.

4. Bake the Chicken:

  1. Place the coated chicken breasts on the prepared baking sheet.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Doritos coating is crispy and golden. The internal temperature of the chicken should reach 165°F (74°C).

5. Serve:

  1. Remove the chicken from the oven and let it rest for a few minutes.
  2. Garnish with chopped fresh parsley if desired.
  3. Serve hot with ranch or blue cheese dressing for dipping.

Tips:

  • Doritos Flavor: While Nacho Cheese Doritos are a classic choice, feel free to experiment with other flavors like Cool Ranch or Spicy Sweet Chili for a different twist.
  • Sealing the Chicken: Use toothpicks to help seal the stuffed chicken breasts if needed. Just remember to remove them before serving.
  • Side Dishes: This dish pairs well with a simple salad, roasted vegetables, or mashed potatoes for a complete meal.

Enjoy your Cream Cheese and Bacon Stuffed Doritos Chicken—it’s a guaranteed crowd-pleaser!
