For the Vegetable Mix:

  • Onion: 1 large, chopped
  • Bell peppers: 2 (any color), sliced
  • Carrots: 2, julienned
  • Zucchini: 1, sliced
  • Tomatoes: 2 large, diced
  • Garlic: 3 cloves, minced
  • Ginger: 1 tablespoon, grated
