1. Classic French Omelette

Ingredients:

  • 3 large eggs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • Optional fillings: cheese, herbs, mushrooms, diced ham

Instructions:

  1. Beat the eggs with salt and pepper.
  2. Heat butter in a non-stick skillet over medium heat.
  3. Pour in the eggs and stir briefly. As the edges set, lift them gently with a spatula, letting the uncooked eggs flow underneath.
  4. When the eggs are mostly set but still slightly runny on top, add any fillings.
  5. Fold the omelette in half and slide onto a plate. Serve immediately.

2. Shakshuka

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups tomato sauce or crushed tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and chili flakes, to taste
  • 4-6 large eggs
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Heat olive oil in a skillet. Add onion, garlic, and bell pepper, and sauté until soft.
  2. Stir in tomato sauce, paprika, cumin, salt, and chili flakes. Simmer until it thickens slightly.
  3. Make wells in the sauce and crack an egg into each well.
  4. Cover and cook until eggs are just set.
  5. Garnish with cilantro or parsley and serve with crusty bread.
