Mexican Tortilla Casserole

A deliciously layered casserole full of Mexican flavor – hearty, cheesy, and so easy to make!

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 jar (16 oz) salsa or 1 can Rotel tomatoes
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup sour cream (optional, for layering)
  • Olive oil for cooking

Optional toppings: chopped cilantro, green onions, sliced jalapeños, avocado, or extra sour cream
