A deliciously layered casserole full of Mexican flavor – hearty, cheesy, and so easy to make!
Ingredients:
- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 jar (16 oz) salsa or 1 can Rotel tomatoes
- 8 small flour or corn tortillas
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream (optional, for layering)
- Olive oil for cooking
Optional toppings: chopped cilantro, green onions, sliced jalapeños, avocado, or extra sour cream
