Crock Pot Vegetable Soup

Total Time: Up to 8 hours

Ingredients:

  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced (or use sweet potatoes)
  • 1 zucchini, chopped
  • 1 can (14 oz) diced tomatoes, with juice
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn (fresh, frozen, or canned)
  • 6 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • Optional: 1 tsp paprika or Italian seasoning
  • Optional: 1 cup spinach or kale (add at the end)
