- 1 bell pepper, diced (any color)
- 2 cups uncooked penne or rotini pasta
- 2 ½ cups beef broth (or water + bouillon)
- 1 cup tomato sauce or crushed tomatoes
- ½ tsp Italian seasoning
- Zest of 1 lemon or 1 tsp lemon juice (for that zesty kick!)
- ½ cup grated Parmesan or shredded cheese
- Chopped parsley or green onion (for garnish)
