Grilled Chicken Avocado Salad

This Grilled Chicken Avocado Salad is a light yet satisfying dish packed with fresh vegetables, creamy avocado, and juicy grilled chicken. Drizzled with a zesty homemade dressing, it’s perfect for lunch, dinner, or meal prep!

Ingredients (Serves 4)

For the Salad:

  • boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano (or Italian seasoning)

Fresh Salad Ingredients:

  • 6 cups mixed greens (romaine, spinach, arugula, or your favorite blend)
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup cucumber, sliced
  • ¼ cup feta cheese or shredded Parmesan (optional)
  • ¼ cup toasted nuts (almonds, walnuts, or pecans for crunch)

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice 
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp honey or maple syrup (optional)
  • Salt & pepper, to taste
