Shrimp and Sausage Foil Packet Dinner

This flavor-packed, no-fuss meal combines succulent shrimp, hearty smoked sausage, potatoes, corn, and veggies, all wrapped up and cooked in convenient foil packets. Ingredients:

For the Foil Packets:

  • 1 pound large shrimp, peeled and deveined
  • 12 oz smoked sausage (andouille or kielbasa), sliced into rounds
  • 2 cups baby potatoes, halved or quartered
  • 2 ears corn, husked and cut into rounds (or 1 cup frozen corn)
  • 1 medium zucchini, sliced thickly
  • 1 red bell pepper, diced
  • ½ red onion, sliced
  • 3 cloves garlic, minced
  • 1 lemon, sliced into rounds
  • 3 tablespoons fresh parsley, chopped (plus extra for garnish)

Seasoning & Sauce:

  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1½ teaspoons Old Bay seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon freshly ground black pepper
  • Optional: ¼ teaspoon cayenne pepper or red pepper flakes (for a spicy kick)
