Ingredients:

  • 2 pounds beef chuck or stewing beef, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4-5 small pearl onions, peeled
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 tablespoons red wine vinegar
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • Salt and freshly ground black pepper, to taste
  • 1 cup beef broth
  • ½ teaspoon sugar (optional, to balance acidity)
