1. Activate the Yeast:

  1. In a small bowl, combine the warm water, sugar, and yeast. Stir to dissolve the sugar and yeast, then cover the bowl and let it sit for about 5-10 minutes until it becomes frothy. This indicates that the yeast is active.

2. Make the Dough:

  1. In a large mixing bowl, combine the flour, salt, and ground nutmeg (if using).
  2. Add the yeast mixture, warm milk, and vegetable oil to the dry ingredients. Mix together until the dough forms. It will be sticky and slightly thick.
  3. If you’re using vanilla extract, stir it into the dough.
  4. Cover the bowl with a clean cloth or plastic wrap, and set it in a warm place to rise for about 1-1.5 hours or until the dough doubles in size.

3. Shape the Puff Puff:

  1. Once the dough has risen, give it a gentle stir. You should see bubbles in the dough.
  2. Heat vegetable oil in a deep frying pan or pot over medium heat. The oil should be at least 2 inches deep, and the temperature should be around 350°F (175°C). Test the oil by dropping a small amount of dough into it—if it rises to the surface immediately, the oil is ready.
  3. Lightly grease your hands with a little oil or water. Scoop small portions of the dough (about the size of a tablespoon) and carefully drop them into the hot oil.
  4. Fry the puff puff in batches, turning them occasionally, for about 4-5 minutes or until golden brown and puffed up. Be careful not to overcrowd the pot to allow even frying.

4. Drain and Serve:

  1. Once the puff puff is golden and cooked through, use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.
  2. Optionally, dust with powdered sugar for a sweet finish.

Tips:

  • Oil Temperature: Make sure the oil is not too hot to prevent the puff puff from burning on the outside while remaining raw on the inside. You can use a thermometer to maintain a steady frying temperature.
  • Flavor Variations: Feel free to add some cinnamon or cardamom for extra flavor. Some people also like to add a pinch of salt or a few drops of lemon juice to balance the sweetness.
  • Storage: Puff puff is best enjoyed fresh, but you can store them in an airtight container for 1-2 days. Reheat them in a microwave or warm oven to enjoy them again.
