Ingredients:

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1 tsp garlic powder
  • ½ tsp freshly ground black pepper

For the Bowl Base:

  • 2 cups cooked jasmine rice, cooled (or substitute brown rice, quinoa, or cauliflower rice)

Toppings:

  • 1 cup diced fresh pineapple
  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced or diced
  • ½ cup shredded carrots
  • 1 cup edamame, cooked and shelled
  • 2 green onions, chopped
  • 2 tbsp sesame seeds (black or white, or a mix)
  • 1 sheet of nori, sliced into thin strips (optional)

For the Sriracha Mayo:

  • ½ cup mayonnaise
  • 1-2 tbsp Sriracha (adjust to taste)
  • 1 tsp lime juice
  • 1 tsp honey (optional for sweetness)
