Cream Chicken Enchiladas

Ingredients

For the Filling:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 4 oz cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 small can (4 oz) diced green chilies
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1/2 cup green enchilada sauce (or red enchilada sauce for a different flavor)
  • 1/4 teaspoon cumin
  • A pinch of cayenne pepper (optional, for heat)

For Assembly:

  • 8-10 medium flour tortillas (corn tortillas can also be used)
  • 1/2 cup shredded cheddar cheese (for topping)
  • 1/2 cup shredded Monterey Jack cheese (for topping)
  • Fresh cilantro, chopped (optional garnish)
  • Sliced jalapeños or diced tomatoes (optional garnish)
