Cookie Dough Bars

Step 1: Prepare the Flour

  1. Heat-Treat the Flour: To make the raw flour safe for eating, spread it on a baking sheet and bake at 350°F (175°C) for 5 minutes, or microwave in a bowl for 1 ½ minutes, stirring halfway through. Allow it to cool completely before using.

Step 2: Make the Cookie Dough Layer

  1. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add Vanilla and Salt: Mix in the vanilla extract and salt until combined.
  3. Add the Flour Gradually: Add the heat-treated flour gradually to the butter mixture, mixing until it’s fully combined and smooth.
  4. Adjust Consistency with Milk: Add the milk, one tablespoon at a time, until the dough reaches a soft, cookie dough-like consistency.
  5. Fold in Chocolate Chips: Gently fold in the mini chocolate chips, distributing them evenly throughout the dough.
  6. Press into Pan: Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal. Press the cookie dough mixture evenly into the bottom of the pan, smoothing the top with a spatula.

Step 3: Prepare the Chocolate Topping

  1. Melt Chocolate Chips and Coconut Oil: In a microwave-safe bowl, melt the chocolate chips and coconut oil (or butter) in 20-second intervals, stirring between each interval until smooth.
  2. Spread Chocolate Layer: Pour the melted chocolate mixture over the cookie dough layer, spreading it evenly with a spatula.

Step 4: Chill and Set

  1. Refrigerate the Bars: Place the pan in the refrigerator for at least 1 hour, or until the chocolate layer is firm and the bars are fully set.
  2. Slice and Serve: Once set, lift the bars out of the pan using the parchment overhang. Use a sharp knife to cut into squares or bars.
