Basic Vegetable Frittata

  1. Preheat the Oven:
    • Preheat your oven broiler.
  2. Whisk Eggs:
    • In a bowl, whisk together the eggs, milk or cream, salt, and black pepper until well combined.
  3. Sauté Vegetables:
    • Heat olive oil in an ovenproof skillet over medium heat. Add chopped onion and diced bell pepper. Sauté until the vegetables are softened, about 3-5 minutes.
  4. Add Spinach and Tomatoes:
    • Add the halved cherry tomatoes and baby spinach leaves to the skillet. Cook for an additional 1-2 minutes until the spinach wilts.
  5. Pour in Eggs:
    • Pour the whisked eggs over the sautéed vegetables in the skillet. Allow the eggs to set around the edges.
  1. Add Cheese:
    • Sprinkle the grated cheese evenly over the eggs.
  2. Finish in the Oven:
    • Transfer the skillet to the preheated oven and broil for 3-5 minutes or until the frittata is set in the center and the top is golden brown.
  3. Garnish and Serve:
    • Remove the frittata from the oven. Garnish with fresh herbs, if desired. Allow it to cool slightly before slicing.
  4. Slice and Enjoy:
    • Slice the frittata into wedges and serve. It can be enjoyed warm or at room temperature.

Feel free to customize your frittata by adding other ingredients such as mushrooms, diced ham, or feta cheese. Frittatas are a great way to use up leftover vegetables or proteins. Enjoy experimenting with different flavor combinations!
