Tajine de Poulet aux Olives et Citrons Confits

Moroccan cuisine is known for its bold and aromatic flavors, and this Tajine de Poulet aux Olives et Citrons Confits(Chicken Tagine with Olives and Preserved Lemons) is one of the most beloved traditional dishes. The combination of tender chicken, zesty preserved lemons, briny olives, and a blend of Moroccan spices creates a mouth-watering meal that will transport you straight to the heart of Morocco.

Ingredients:

For the Marinade (Chermoula):

  • 1 whole chicken (cut into pieces or use 4-6 chicken thighs/drumsticks)
  • 2 cloves garlic, minced
  • 1 tbsp ground ginger
  • 1 tbsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp saffron threads, crushed and soaked in 2 tbsp warm water
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt, to taste

For the Tagine:

  • 1 large onion, finely chopped
  • 1 cinnamon stick
  • 2 preserved lemons, rinsed and quartered
  • 1 cup green or purple olives, pitted
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup chicken broth or water
  • 2 tbsp olive oil
  • Optional: A pinch of cayenne pepper for heat
