Prepare the Sweet Rice Dough:

  1. Combine Ingredients:
    • In a bowl, combine glutinous rice flour, water, and sugar. Mix until you have a smooth, pliable dough. Adjust the water or flour as needed.
  2. Shape the Dough:
    • Take a small portion of the dough (about 1 tablespoon) and flatten it in your palm. Place a small amount of sweet mongo filling in the center, then enclose the filling with the dough, forming a ball.
  3. Coat with Sesame Seeds:
    • Roll the filled dough ball in sesame seeds until well coated.
  4. Repeat:
    • Repeat the process until all the dough and sweet mongo filling are used.

Fry the Butchi:

  1. Heat Oil:
    • Heat oil in a deep fryer or a deep pan to 350°F (175°C).
  2. Deep Fry:
    • Carefully drop the coated balls into the hot oil and fry until they turn golden brown, about 3-4 minutes.
  3. Drain and Cool:
    • Use a slotted spoon to remove the fried sesame seed balls and place them on a plate lined with paper towels to drain excess oil.
  4. Serve:
    • Allow the Butchi to cool slightly before serving. They can be enjoyed warm or at room temperature.
