Triple chocolate mousse cake

1. Chocolate Cake Base:

  1. Preheat your oven to 350°F (175°C). Grease and line the bottom of a 9-inch (23cm) springform pan.
  2. In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Mix until well combined.
  4. Stir in the boiling water until the batter is smooth. It will be thin, but that’s okay.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

2. Dark Chocolate Mousse Layer:

  1. Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Allow it to cool slightly.
  2. Whip the heavy cream and sugar until stiff peaks form.
  3. Gently fold the melted chocolate into the whipped cream until well combined.
  4. Spread the dark chocolate mousse over the cooled chocolate cake. Refrigerate while you prepare the next layer.

3. Milk Chocolate Mousse Layer:

  1. Repeat the process for the milk chocolate layer using the ingredients listed for the milk chocolate mousse.
  2. Carefully spread the milk chocolate mousse over the dark chocolate layer. Refrigerate again.

4. White Chocolate Mousse Layer:

  1. Repeat the process for the white chocolate layer using the ingredients listed for the white chocolate mousse.
  2. Spread the white chocolate mousse over the milk chocolate layer.

5. Chill:

  • Cover the cake with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow the mousse to set.

6. Serve:

  • Before serving, you can garnish the cake with chocolate shavings, cocoa powder, or fresh berries if desired.
