1. Cook the Meats
- In a large skillet or griddle, cook bacon until crispy. Set aside on paper towels.
- In the same pan, cook sausage until browned and fully cooked (internal temp 160°F / 71°C). Set aside and keep warm.
2. Make the Home Fries
- Parboil potato cubes for 5 minutes, then drain.
- Heat oil in a pan, add potatoes, season with salt, pepper, paprika.
- Add onions (and peppers if using). Cook for 12–15 minutes, stirring occasionally, until golden and crispy.
3. Cook the Pancakes
- In a bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, salt.
- In another bowl, whisk buttermilk, egg, and melted butter.
- Combine wet and dry, stir until just mixed (lumps are okay!).
- Heat a griddle and grease lightly. Pour batter into rounds and cook 2–3 minutes per side, until golden.
- Keep warm in a low oven.
4. Make Cheesy Eggs
- Beat eggs with milk, salt, and pepper.
- Melt butter in a nonstick skillet over medium-low heat.
- Cook eggs slowly, stirring gently until just set.
- Stir in cheese and remove from heat.
