1. Cook the Meats

  • In a large skillet or griddle, cook bacon until crispy. Set aside on paper towels.
  • In the same pan, cook sausage until browned and fully cooked (internal temp 160°F / 71°C). Set aside and keep warm.

2. Make the Home Fries

  1. Parboil potato cubes for 5 minutes, then drain.
  2. Heat oil in a pan, add potatoes, season with salt, pepper, paprika.
  3. Add onions (and peppers if using). Cook for 12–15 minutes, stirring occasionally, until golden and crispy.

3. Cook the Pancakes

  1. In a bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, salt.
  2. In another bowl, whisk buttermilk, egg, and melted butter.
  3. Combine wet and dry, stir until just mixed (lumps are okay!).
  4. Heat a griddle and grease lightly. Pour batter into rounds and cook 2–3 minutes per side, until golden.
  5. Keep warm in a low oven.

4. Make Cheesy Eggs

  1. Beat eggs with milk, salt, and pepper.
  2. Melt butter in a nonstick skillet over medium-low heat.
  3. Cook eggs slowly, stirring gently until just set.
  4. Stir in cheese and remove from heat.

Pro Tips:

  • Serve with warm maple syrup, hot sauce, or even a dollop of fruit jam
  • Add chopped scallions to eggs or parsley over the potatoes for extra freshness
  • Make it a brunch board with fruit, toast, and juice on the side!
