Ingredients:
For the Chicken:
- 1 ½ lbs (about 700g) boneless, skinless chicken breasts, cut into bite-sized cubes
- Salt & pepper, to taste
- 1 tsp paprika
- 1 tsp Italian seasoning (or thyme + oregano)
- 2 tbsp olive oil
For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 5 garlic cloves, minced
- Juice of ½ lemon
- 1 tbsp chopped fresh parsley (optional)
For the Asparagus:
- 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
- Salt & pepper, to taste
- 1 tbsp olive oil
