Pot Roast Mac And Cheese Cornbread

  1. Prepare the Pot Roast:
    • Season the chuck roast generously with salt and black pepper.
    • Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chuck roast and sear on all sides until browned. Remove the roast from the pot and set aside.
    • In the same pot, add chopped onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
    • Return the seared chuck roast to the pot. Add beef broth, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf.
    • Bring to a simmer, then cover and cook over low heat for 2-3 hours, or until the roast is tender and easily shreds with a fork.
    • Once cooked, remove the roast from the pot and shred the meat using two forks. Discard any excess fat and the bay leaf.
  2. Prepare the Mac and Cheese:
    • Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
    • In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to make a roux.
    • Gradually whisk in milk until smooth and thickened.
    • Stir in shredded cheddar cheese until melted and smooth. Season with salt and black pepper to taste.
    • Add the cooked macaroni to the cheese sauce and stir until well combined.
  1. Prepare the Cornbread:
    • Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
    • In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
    • In a separate bowl, whisk together milk, vegetable oil, honey, and egg.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
    • Pour the cornbread batter into the prepared baking dish and spread it out evenly.
  2. Assemble and Bake:
    • Spread the shredded pot roast evenly over the cornbread layer.
    • Spoon the mac and cheese over the pot roast layer, spreading it out evenly.
    • Bake in the preheated oven for 20-25 minutes, or until the cornbread is golden brown and cooked through.
  3. Serve:
    • Allow the pot roast mac and cheese cornbread to cool slightly before slicing and serving.

Enjoy this hearty and flavorful dish as a comforting meal for any occasion!
