French Onion Potato Bake

Ingredients:

  • 2 lbs (about 4 medium) Yukon Gold or Russet potatoes, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 cup beef broth (or vegetable broth)
  • 1/2 cup heavy cream or half-and-half
  • 1 1/2 cups shredded Gruyère cheese (or Swiss/mozzarella blend)
